Crispy Baby Corn: A Delicious Crunch You Can’t Resist

This snack is becoming popular in homes across India (and beyond!). It tastes nice, is crunchy but chewy, and it looks beautiful and appetizing serve at parties, family dinners or munching on the weekend too!

What is Crispy Baby Corn?

Crispy baby corn is a very simple but super addictive dish of sweet, super tender baby corn batters and deep fried until golden, crunchy, crispy on the outside and juicy and tender on the inside. Crispy baby corn is usually served with spicy dips or sauce or is part of many Indo-Chinese dishes including the popular crispy chilli baby corn recipe. 

So if you are a vegetarian wanting a new recipe for dinner or love to try street-foody kind of recipes at home, you can’t go wrong with crispy baby corn fry recipe.

Ingredients Needed

This is everything you need to make this super delicious and addictive snack.

  • 15-20 baby corn
  • 1/2 cup maida or all-purpose flour
  • 1/4 cup cornflour
  • 1 tsp red chili powder
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala
  • 1/2 tsp black pepper
  • Salt to taste
  • 1 tsp ginger garlic paste
  • Water (as needed for batter)
  • Oil (for frying)
  • Optional for a crispy chili baby corn recipe – for a chili twist
  • 1 onion (sliced)
  • 1 bell pepper (sliced)
  • 2 green chilies (slit)
  • 1 tbsp soy sauce
  • 1 tbsp tomato ketchup
  • 1 tsp vinegar

How To Make Crispy Baby Corns (Step-By-Step)

Step 1: Prepare the Baby Corns

Firstly, you will need to prepare the baby corn. The first step you take is to wash and clean your baby corn! After you have washed the baby corn, if it is long, you can slice it lengthwise (or cut and half).  After preparing, place in a bowl and pour boiling hot water into the container from the kettle which has been boiling for at least a few minutes. You will want to boil the baby corn for 5-6 minutes or until soft and tender. Lastly, allow to cool and strain baby corn for later use.

 Step 2: Make the batter.

In a mixing bowl, add all purpose flour, cornflour, red chili powder, turmeric, black pepper, salt and ginger garlic paste. Once mixed together, you will want to add water gradually until you have nice thick smooth batter, then you will add each boiled baby corn cube and thoroughly coat with batter.

Step 3: Fry them

Pour oil into a Deeep frying pan (kadhai). Increase the temp to medium high. Place the coated corn pieces in the oil and fry preiodically turning the pieces, for 4-5 minutes until golden brown and crispy. Remove from kadhai carefully and place on paper towel to absorb excess oil. 

Wohoo, your crispy baby corn is ready. Enjoy as a snack or appetizer. 

Step 4: Optional – Crispy Chilli Baby Corn Put 1 tbsp of oil in a wok and heated then add in the onion, green bell pepper and green chilies and stir-fry over high heat for 2 minutes. Add in the soy sauce, ketchup and vinegar and toss to combine Add in the fried baby corn into the wok and toss for another 2–3 minutes.

  • Fry straight crisp in hot oil at 350F or 180C.
  • If you want it crispier you can put in a little baking soda in your batter.
  • If you want it a little sweeter, chop some green chilies and add them to the batter and/or sauce.
